That was definitely a first for me. I wasn't sure if it would count or not since I had never seen it done before. Good goal or not, it was epic.

Yeah I've never seen that. Not into the net at least. I figured it wouldn't count, but feel it should. It is after all a helluva play. Post the vid for folks if you wish. I'm too lazy.

From the NHL:

At 8:47 of double overtime in the Chicago Blackhawks/Anaheim Ducks game, video review supported the referee’s call on the ice that Andrew Shaw deliberately headbutted the puck into the Anaheim net. According to Rule 78.5 (i) “Apparent goals shall be disallowed when the puck has been directed, batted or thrown into the net by an attacking player other than with a stick.” No goal Chicago.

I must say, I've never seen this before in all my years of watching hockey....I watched more than a few goals go right off Dave Brown's melon....but he did not direct it, so they counted.

In that position, Shaw was standing up, would it had counted if redirects off his head and somehow goes in untouched by another attacking player? (his head was above the crossbar similar to a high stick)?

It didn't count because he purposefully headed the puck. Had it deflected off his head and gone in it, it would have counted. Similar to the difference to going in off a skate and going in off a skate with a distinct kicking motion.

Watching it again, it was a heads up play (pun intended) not to play it with his stick. It looked like he was about to to so until he realizes how high the stick is and that it wouldn't count. Realizing that, he probably made a smart move. He may or may not have known if it would be a legal goal, but since so many people seemed unsure of it and had never seen such a thing, maybe he could have been lucky enough to see it stand.

Yes, if he was smart, he would have moved his head into a situation where the puck could hit it and go in...instead of directing it with the head, use your feet to move into the proper position.
